In 2009, Gamila bought 12 acres in Beechworth and decided that table olives and saffron were right for the climate. 9 years later, her wild fermented table olives take 18 months from harvest to be table ready, but this time and effort is creating a unique product that is winning medals in all the major food awards. As a counter point to this, she also grows saffron. An ancient spice, which is requiring significant market education to understand it's true power as a flavour enhancer rather than just a colourant. You can find her products at several Melbourne farmers markets, with a number of chefs exploring her Saffron Extract in their kitchens.
