MAPLE BAKED BEANS
500 grams dried navy beans (or other similar white bean), soaked overnight and drained
6 cups water
1 cup cubed salt pork or thick cut bacon
1 onion, chopped
1/2 cup maple syrup
1/4 cup ketchup
2 tablespoons apple cider vinegar
2 teaspoons dry mustard
1 1/2 teaspoons salt
1/2 teaspoon pepper
Preheat oven to 175°C.
In a large, ovenproof pot, add beans and water. Bring to a boil. Reduce heat and simmer for 15 minutes.
Add pork, onion, maple syrup, ketchup, vinegar, mustard, salt and pepper. Stir to combine. Cover and transfer to oven. Cook 2 hours, stirring every 30 minutes. Remove lid and cook another 45 minutes. Serve immediately or at room temperature.
